Lighter Banana Muffins



What to do with ripe bananas? I found this recipe on allrecipes.com and added a few adjustments. We both really like them!!!

2 eggs, beaten
2 ripe bananas, mashed
small jar of applesauce
1 C whole wheat flour
1 C all purpose flour
3/4 C brown sugar
dash of cinnamon and nutmeg
1 tsp. vanilla
1 tsp. baking soda

  1. Preheat oven to 350 degrees F. Lightly grease or line 12 muffin cups.
  2. In a medium bowl, combine eggs and bananas. In a separate bowl, mix together flour, cinnamon, nutmeg, brown sugar and baking soda. Stir banana mixture into flour mixture. Fold in walnuts if desired. Pour batter into prepared muffin cups.
  3. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.

23 minutes perfect for me. There are other additions and substitutions you could do to make it just how you like it too. Enjoy!!
