What to do with ripe bananas? I found this recipe on allrecipes.com and added a few adjustments. We both really like them!!!
2 eggs, beaten
2 ripe bananas, mashed
small jar of applesauce
1 C whole wheat flour
1 C all purpose flour
3/4 C brown sugar
dash of cinnamon and nutmeg
1 tsp. vanilla
1 tsp. baking soda
- Preheat oven to 350 degrees F. Lightly grease or line 12 muffin cups.
- In a medium bowl, combine eggs and bananas. In a separate bowl, mix together flour, cinnamon, nutmeg, brown sugar and baking soda. Stir banana mixture into flour mixture. Fold in walnuts if desired. Pour batter into prepared muffin cups.
- Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
23 minutes perfect for me. There are other additions and substitutions you could do to make it just how you like it too. Enjoy!!
