1/2 cup oil (Coconut or vegetable)
3 eggs
1 1/2 cups sugar
1 1/2 cups canned pumpkin
3/4 tsp. ground cinnamon
1/4 tsp. heaping nutmeg
1/4 tsp. heaping ginger
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1 3/4 cups plus 2 TBS flour
1/2-1 cup mini chocolate chips
Cinnamon Sugar Topping:
1/8 cup sugar
Cinnamon to liking
Directions:
Preheat oven to 350 degrees. Beat everything together until smooth and pour into greased donut pan or donut maker. Fill 3/4 of the way full. Bake about 16 minutes or until fully cooked. Remove from pan and let cool 15 minutes then cover with cinnamon and sugar topping.
