Corn tortilla and black bean bake

We have tons of black beans so I threw this small dish together. It was enough for Jason and I both have two small servings. This is one of those dishes you can add things to and personalize to you taste.

4 corn tortillas
1 cup cooked black beans
1 large tomato cut in small pieces
1/2 green pepper diced
1 teaspoon real diced garlic
1 teaspoon chili powder
dash of jalepeno powder
cheese

Combine everything put the tortillas and cheese in a medium skillet and simmer for ten minutes. In a small casserole dish layer tortillas, bean mixture and cheese ending with cheese on top. Cover and bake at 350 for 20-25 minutes!!!

Banana Bread

I got this recipe from ALLRECIPES.COM, but I made a few changes. Half the loaf has already been eaten up! Jason says it's the best banana bread he's had. How sweet of him! Enjoy!!


Ingredients

1/2 cup all-purpose flour
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup butte
3/4 cup brown sugar
2 eggs, beaten
3 mashed overripe bananas

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda, cinnamon, and nutmeg. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas and vanilla until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 50 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
